Apple Pie with Cheese: Why Cheddar Belongs on Your Slice (& How to Serve It)

"Apple pie without cheese is like a kiss without a squeeze." That's not us talking. That's a saying older than your grandmother's pie tin.

Cheddar on apple pie sounds like a prank until the first bite, when sharp, salty, crystal-crunchy cheese meets warm cinnamon apples & suddenly you understand what New England & the Midwest have known for a century. Here's where the tradition comes from, the truth about the famous Wisconsin "cheese law," & exactly how to serve it (a cheesemaker has opinions).

Cheesy Takeaways
  • Cheddar & apple pie is a real, old tradition with English roots, kept alive in New England & the Midwest.
  • The "Wisconsin law requiring cheese on apple pie" is a myth, but the real 1935 law is almost better.
  • Sharp 2-to-8-year cheddar is the sweet spot: bold enough to stand up to sugar, still sliceable.
  • Serve it as a slice alongside, melted on top, or baked into a cheddar crust. All three work.
  • Salty + sweet + fat + acid is the whole science. Cheddar checks every box.

Where Cheese on Apple Pie Actually Comes From

The pairing traces back to England, where cheese with fruit pie (especially in Yorkshire, with crumbly Wensleydale) has been standard for centuries. English settlers carried the habit to New England, & from there it spread across the dairy belt into the Midwest, where it found its forever home: places with a lot of orchards & even more cheese.

By the early 1900s, a slice of cheddar with apple pie was diner-menu normal across Wisconsin, Iowa, & the Upper Midwest. It never fully caught on nationwide, which is why half the country still gasps at it & the other half wonders what the fuss is about. We're firmly in the second camp (shocking, we know).

The Wisconsin Cheese Law: Myth, Meet Reality

You've probably seen the claim: "In Wisconsin, it's illegal to serve apple pie without cheese." Fun story. Not true.

Here's the real one, & honestly it's better. In 1935, Wisconsin passed a law requiring restaurants to serve a small amount of cheese & butter with every meal. Not just pie. EVERY meal. It ran from June 1935 to March 1937, & it holds the distinction of being the first Wisconsin law with a built-in sunset date. For 21 glorious months, cheese with your food wasn't a suggestion in this state. It was the law.

Bonus trivia for your Thanksgiving table: Vermont's 1999 law naming apple pie the official state pie asks for a "good faith effort" to serve it with cold milk, a slice of cheddar, or vanilla ice cream.

"Wisconsin walked so Vermont could waddle."

Which Cheddar Belongs on Pie (A Cheesemaker's Ranking)

Not all cheddar is pie cheddar. Age changes everything.

A young mild cheddar melts nicely but gets lost against sugar & cinnamon. On the other end, our 17-Year Super-Sharp Cheddar is magnificent, but it's a spoil-yourself cheese that deserves its own spotlight, not a supporting role under ice cream.

The sweet spot is sharp, aged, & still sliceable:

  • Aged 4 Years

    Dry Aged Cheddar

The classic pick. Sharp, clean, slices beautifully, melts evenly over a warm slice.

  • Aged 8 Years

    8-Year Super-Sharp Cheddar

The flavor-forward pick. Crumbly, potent, with calcium lactate crystals that add a little crunch against soft apples. (Those white crunchies are a badge of proper aging. We explain why in why aged cheddar crumbles.)

  • Aged 13 Years

    13-Year Super-Sharp Cheddar

The conversation piece, for the pie that deserves a standing ovation.

Whichever you choose, the science is the same: pie brings sweet & acid, cheddar brings salt & fat. Four corners of flavor, one fork. It's the same logic behind our sharp cheddar pairing post, just with more cinnamon.

Three Ways to Serve It (Pick Your Level)

Level 1: The Slice on the Side

The classic. A quarter-inch slice of sharp cheddar next to (or on top of) a warm slice of pie. The heat softens the cheese just enough. Purists eat alternating bites; enthusiasts stack. Both are correct.

Level 2: The Melt

Lay a slice of cheddar over the pie & warm it for 5 to 8 minutes in a low oven until the cheese goes glossy. This is the version that converts skeptics, because melted sharp cheddar over cinnamon apples needs no argument. Want a little sweet heat? Finish it with a thin thread of Hot Honey Drizzle.

Level 3: The Cheddar Crust

Bake the cheese INTO the pie. Work about 1 cup of finely shredded sharp cheddar into your standard double-crust dough (cut it in with the butter, then proceed as usual). The crust bakes up golden, flaky, & quietly savory, & the whole kitchen smells like a Wisconsin bakery. This is the "apple cheddar pie" your great-aunt was right about.

Pro Tip

For clean slices off an aged block, use room-temperature cheese & a Wire Cheese Slicer. Cold aged cheddar crumbles by design.

Frequently Asked Questions

Why do people put cheese on apple pie?
It's an old English tradition carried to New England & the Midwest. Practically, it works because sharp cheddar's salt & fat balance the pie's sweetness & acidity, the same reason salted caramel works.
Is it a law in Wisconsin to serve cheese with apple pie?
No, that's a myth. The real 1935 Wisconsin law required restaurants to serve a small amount of cheese & butter with every meal, & it expired in March 1937. It never singled out pie.
What kind of cheese goes on apple pie?
Sharp aged cheddar. A 2-to-5-year cheddar slices & melts cleanly; an 8-year adds bolder flavor & crystal crunch. Mild cheddar gets lost under the sugar.
Do you melt the cheese on apple pie or serve it cold?
Both are traditional. A room-temp slice alongside is the classic; melting it over the warm slice for a few minutes in a low oven is the crowd-converter.
What is apple pie with cheese on top called?
It doesn't have one official name. You'll hear "apple pie with cheddar," "Yorkshire style," or simply "the right way," depending on who's serving it.
Does cheddar cheese go with apples in general?
Absolutely. Sharp cheddar & crisp apples are a classic board pairing all fall. It's the star combo in our fall cheese board ideas too.
