What Is a Wisconsin Supper Club? The Old-Fashioned Night Out That Never Went Out of Style
Quick answer: a supper club is a destination restaurant, usually family-owned, often on a lake or a county highway, where dinner is an entire evening. You arrive early, order a brandy old fashioned at the bar, graze a relish tray, eat prime rib or Friday fish fry, & finish with an ice cream drink. Nobody rushes you. That's the whole concept, & Wisconsin perfected it.

The Supper Club, Explained
A supper club isn't defined by a menu so much as a pace. You don't stop at a supper club on the way to something else. The supper club IS the something else.
The formula has held for the better part of a century: a standalone building out where the roads get quiet, ideally with a lake view. Wood paneling. A bar that takes up half the building, because the evening starts there, not at the table. Drinks & conversation first, then a relish tray while you look over a menu of steaks, seafood & broasted chicken, then dinner, then a dessert cocktail because you're an adult & ice cream with brandy in it is available. Three hours minimum, & that's the point.
Where Supper Clubs Came From
The supper club story runs through the 1930s. Post-Prohibition, roadside taverns & clubs across the Upper Midwest evolved into full-evening dinner destinations, & the concept itself is often credited to Milwaukee-born restaurateur Lawrence Frank, who took the idea west & helped popularize the term. But while the name traveled, the culture took root at home: Wisconsin's small towns, lakes & long winters turned the supper club into a statewide institution.
Most states let the format fade after the 1970s. Wisconsin didn't. Hundreds still operate here, many run by the same families for generations, & "supper club" remains a living category on Wisconsin road signs, not a nostalgia act. There's a reason the state that takes cheese, beer & brandy seriously is the state that kept the restaurant format built around all three.
The Rituals (What Makes It a Supper Club & Not Just Dinner)
The Brandy Old Fashioned
Wisconsin famously drinks more brandy than just about anywhere, & the brandy old fashioned (sweet, with soda & a muddled orange & cherry) is the unofficial state cocktail. Ordering one is how you say hello at a supper club.
The Relish Tray
Before dinner arrives, a tray of pickles, olives, radishes, carrots, crackers, spreads & often cheese lands on the table. It's the ancestor of the modern charcuterie board, & frankly it never needed improving. More on recreating it below.
Friday Fish Fry
Fried perch, walleye or cod with potato pancakes or fries, every Friday, everywhere in the state. A tradition with deep roots in Wisconsin's Catholic communities that long ago went universal. Many supper clubs still run on the Friday-fish, Saturday-prime-rib calendar.
The Ice Cream Drink
Dessert is a grasshopper or a brandy alexander: ice cream, blended with liqueur, served in a glass. It's dessert & a nightcap holding hands, & it's non-negotiable at least once.
