The Short Answer

What Is Sharp Cheddar Cheese?

Sharp cheddar is cheddar that has aged long enough to develop a bold, tangy bite. Most sharp cheddar is aged around 9 to 12 months; extra sharp, 18 months to 2 years or more. "Sharp" describes flavor intensity, not heat, & it comes from one thing: time.

As cheddar ages, cultures turn the last of the lactose into lactic acid, proteins break down into savory amino acids, & moisture slowly leaves. The result is tangier, nuttier, firmer & eventually crumbly cheese with crunchy crystals. The term isn't regulated in the U.S., so one brand's "sharp" can be another's medium.

For the full definition, start with what is sharp cheddar, then how long to age cheddar for sharp flavor for how far aging can go. Below: the whole scale, our lineup, & what each year adds.

Key Takeaways
  • Sharpness is age. Mild cheddar is a few months old; sharp is about a year; extra sharp is 18 months or more.
  • Sharp means tangy & intense, not spicy. Color comes from annatto & has nothing to do with sharpness.
  • Long-aged cheddar gets crumbly & grows crunchy calcium lactate crystals. Both are good signs.
  • Our 8, 13 & 17-year cheddars are lactose-free, & unopened they keep getting better in the fridge.
  • Pair big cheddar with big flavors: summer sausage, bacon jam, apple, stout or whiskey.

The Sharpness Scale

Mild vs Sharp vs Extra Sharp vs Super Sharp

Typical aging ranges. Because "sharp" isn't regulated, exact times vary by cheesemaker; ours are printed on every block.

The biggest jump on the scale is the first one. Our guide to mild vs sharp cheddar explains what changes between a few months & a year, & which one belongs in a grilled cheese versus on a board. Past a year, sharp vs extra sharp cheddar covers where most grocery labels stop & where real aging starts.

In the UK, the same long-aged style is sold as extra mature cheddar cheese. Whatever the label says, the test is the same: a sharp, lingering tang, a firmer bite & eventually that crystalline crunch. For a well-aged block at an everyday price, start with our four-year-old aged cheddar cheese.

What Aging Does

Why Older Cheddar Tastes Sharper

Five things happen inside a block of cheddar as the years go by. Each one shows up in the flavor or the texture.

Gardner's 13-Year-Old Super-Sharp Cheddar
1

Lactose turns to lactic acid

The last of the milk sugar becomes lactic acid, which is the tang you taste as "sharp." It is also why long-aged cheddar is lactose-free.

2

Proteins break into amino acids

Enzymes from the cultures break proteins into savory, nutty compounds. That depth is the difference between sharp & simply sour.

3

Moisture leaves

Year by year the cheese firms up & starts to break instead of bend. Here is why aged cheddar cheese crumbles, & why that is a good thing.

4

Crystals form

Calcium lactate crystals, the white crunch in our 8, 13 & 17-year blocks, are proof of aging, not mold or salt. More on cheese crystals.

5

Aroma gets bolder

Long-aged cheddar can smell surprisingly funky. Here is why super sharp cheddar smells funky & how to tell normal funk from spoilage.

For the flavor side of things, the art of aged cheddar matches each age to a mood.
White vs Yellow

Is White Cheddar Different From Orange Cheddar?

Only in color. Cheddar comes out of the vat a pale, creamy off-white. Orange cheddar gets its color from annatto, a natural, essentially flavorless plant-based coloring from the seeds of the achiote tree. Two cheddars of the same age taste the same whatever coat they wear.

What changes flavor is age. A white cheddar labeled "aged" is usually just showing off its natural color. The full side-by-side is in cheddar vs white cheddar, the history of the orange habit is in our white cheddar vs yellow breakdown, & aged white cheddar covers the long-aged style on its own.

Quick Answers
  • Is white cheddar sharper? Not because it's white. Sharpness comes from age.
  • Does annatto change the taste? Not at the amounts used in cheese.
  • Is one healthier? Same cheese, same nutrition. The color is cosmetic.
  • Which melts better? The younger one, regardless of color.

What to Pair With Sharp Cheddar

Big cheese wants big partners. Match the intensity, then add something sweet or salty to play against it.

Drinks

Stout, whiskey, bold reds

The older the cheddar, the bigger the drink: a glass of wine or a favorite beer with the 8-year, whiskey or a pilsner with the 17-year. Our guide to pairing sharp cheddar cheese has the full list.

Sweet & smoky

Jam, drizzle, sausage

Hot Pepper Bacon Jam on a slice of 8-year cheddar, Wild Berry Drizzle with the 13-year, & Garlic Summer Sausage alongside all of them.

Bake it in

Pie, biscuits, more

A slice of cheddar on warm apple pie with cheddar cheese is a Wisconsin tradition. Our cheddar bomb biscuits use the 8-year, & the horseradish cheddar recipes bring the heat.

Slicing tip: long-aged cheddar crumbles under a knife. A Gardner's wire slicer cuts clean slices, & letting the block sit out 45 to 60 minutes before serving brings out the full flavor.

Sharp Cheddar FAQ

Your Questions, Answered

The cheddar questions we hear most, answered by the people who age it.

What is sharp cheddar cheese?

Cheddar that has aged long enough, usually around 9 to 12 months, to develop a bold, tangy flavor & a firmer texture. "Sharp" describes flavor intensity, not spice.

How long is cheddar aged to be sharp?

Typically 9 to 12 months for sharp & 18 to 24 months or more for extra sharp, though the terms aren't regulated & vary by cheesemaker. Our super sharp cheddars are aged 8, 13, 17 & 20 years.

What is the difference between sharp & extra sharp cheddar?

Age. Extra sharp is aged longer than sharp, which makes it tangier, more complex & more crumbly, often with crunchy crystals.

What is the difference between mild & sharp cheddar?

Mild cheddar is a few months old: creamy, buttery & easy to melt. Sharp cheddar has aged about a year: bolder, tangier & firmer.

Is sharp cheddar spicy?

No. Sharp means a tangy, concentrated flavor that builds with age. There is no heat unless peppers are added.

Is white cheddar sharper than yellow cheddar?

Not because of the color. Yellow cheddar is colored with annatto, which is essentially flavorless. Sharpness comes from aging.

What are the crunchy bits in aged cheddar?

Calcium lactate crystals. They form naturally as cheddar ages, they are safe to eat, & most people consider them the best part.

Why is aged cheddar crumbly?

As cheddar ages it loses moisture & its protein structure tightens, so it breaks instead of bending. It is a sign of a well-aged block.

Is aged cheddar lactose-free?

Long-aged cheddar has essentially no lactose left because aging converts it to lactic acid. Our 8, 13 & 17-year cheddars are lactose-free.

How long does aged cheddar last?

Unopened in the fridge, our aged cheddars last indefinitely & keep getting better. Once opened, wrapped well, about a month.
