Cheese Curds, Explained
Cheese curds are fresh, unaged pieces of cheddar. When milk sets & is cut, those pieces are normally pressed into a block & aged for months. Salt them & bag them right away instead, & you get curds: mild, milky, springy & squeaky against your teeth.
Ours are made every morning in Marshfield, Wisconsin & shipped the same day. Start with the original white cheddar squeaky cheese.
- Curds are young cheddar, salted & bagged instead of pressed & aged.
- The squeak means fresh. It fades within a week or two.
- Room temperature squeaks loudest; a few seconds in the microwave brings it back.
- Wisconsin is curd country & October 15 is National Cheese Curd Day.
- Eat them plain, fried, on poutine or on a burger.
How Cheese Curds Are Made
Four ingredients: pasteurized milk, cheese culture, salt & enzymes. The timing does the rest.
Milk sets
Culture & enzymes turn warm milk into a soft solid while the liquid whey separates out.
The curd is cut
The set milk is cut into small pieces. The size of the cut sets the texture.
Salted, not pressed
A block gets pressed & aged. A curd gets salted, bagged & that's it.
Shipped same day
Ours leave Marshfield within hours of being made, squeak intact.
| Cheese curds | Aged cheddar | |
|---|---|---|

Why Do Cheese Curds Squeak?
The squeak is the best freshness test in the dairy case.
Springy proteins
Fresh curds hold long, elastic strands of milk protein. They rub against your teeth when you bite, & that friction is the squeak.
A freshness clock
As curds age the protein network relaxes & the squeak fades, usually within a week or two. A squeaky curd is always a fresh curd.
Warm them up
Cold curds are quiet. Ten minutes on the counter, or 5 to 10 seconds in the microwave, wakes the squeak back up.

Your Questions, Answered
For more, see the full Cheese Curd FAQ.
What are cheese curds?
Fresh, unaged pieces of cheddar. They form when milk sets & is cut, & instead of being pressed into a block & aged, they are salted & bagged right away.
Why do cheese curds squeak?
Fresh curds hold elastic strands of milk protein that rub against your teeth when you bite. As curds age, the proteins relax & the squeak fades.
How long do cheese curds stay squeaky?
The squeak is strongest in the first few days & fades over a week or two. Warming them to room temperature, or 5 to 10 seconds in the microwave, brings it back.
Are cheese curds the same as cheddar?
They are cheddar, just younger. A block of cheddar starts as curds that are pressed together & aged.
What do cheese curds taste like?
Mild, milky & a little salty, with a springy, squeaky bite. Flavored curds add seasonings like garlic & dill or maple bacon.
Do cheese curds need to be refrigerated?
Yes. Keep them in the fridge & eat or freeze them within about 2 weeks. Let them sit out a few minutes before eating for the best squeak.
Can you freeze cheese curds?
Yes. Curds are the one cheese we recommend freezing. Thaw them in the fridge, then warm them briefly to bring back the texture.
Where do cheese curds come from?
Any cheddar maker produces curds, but Wisconsin made them famous. Ours are made every morning in Marshfield, Wisconsin.
When is National Cheese Curd Day?
October 15.
Are cheese curds gluten-free?
Yes. All Gardner's cheeses, curds included, are gluten-free.
